Fancy that fish cracker served as on-tray at Southeast Asian restaurant? Fried your own at home with this Terengganu fish crackers (Terengganu is a Malaysian State of the West Malaysian Peninsular).

Keropok ikan (or krupuk ikan) originated from Indonesia and are deep fried fish crackers made from fish and spices (for flavouring). Today, fish crackers are commonly found in Southeast Asia and East Asia.

The pre-fried crackers are made by mixing fish paste with tapioca flour and/or sago flour, salt, sugar and MSG. The mixture is then knead into a dough and boiled/steamed. Once cooked, it is sliced into thin, long slices and dried and voila! You have the dried, pre-fried fish crackers as pictured. You will need to deep-fry it before serving. 

 

Cooking methods:

1. Place several chips into hot boiling oil and deep fry for a few seconds until puffed up and crispy (about 5-10 seconds).

2. Remove and drain the excess oil on a strainer or paper towels.

3. Enjoy and indulge! (Can be served warm or cold but best served warm)

 

*Some suggests baking fish crackers but the magic happens when it is deep fried in oil.
